 This cake has ancient Lombard origins and legend has it that it was invented by an herbalist monk from the Certosa di Pavia . The religious subsequently proposed it to his confreres who, impressed by the goodness of the dessert, called it the "Torta del Paradiso". Only in 1878 the Pavese pastry chef Enrico Vigoni, owner and founder of the "Pasticceria Vigoni" still existing in the center of Pavia, at the invitation of the Marquis Cusani Visconti , codified the recipe for the paradise cake making it become famous throughout the Italian peninsula.
